Simple steps to make your own home-made strawberry jam:
- 12 cups of whole fruit (=6 cups of prepared fruit)
- 1 package pectin (we used Mrs. Wages Sugar free fruit pectin Home Jell, 1.75oz.)
- 2-3 cups sugar

Preparation:
- Sort, stem, and wash berries. Crush thoroughly. (you can feed the stems to your chickens)
- Add 1/4 cup water.
- Place measured fruit in 6 or 8 quart saucepan.
- Stir in pectin & let sit for about 10 minutes. Then bring to boil over high heat, stirring constantly.
Next
- Add 2 cups sugar when mixture comes to a full boil. return to a full boil & stir constantly. Boil for 1 minute.
- Remove from heat & skim off foam.
- Ladle into hot jars, leaving 1/4-inch headspace.
- wipe jar rims clean
- Cover with hot lids & rings.
- Tighten rings firmly BUT do not overtighten.
Finishing steps
- Place in a boiling water canner for 5 minutes after water is boiling. Ensure water covers jars by 2 inches.
- Allow to cool for 5 minutes after that.
- Remove the jars from pot.
- Allow jars to cool for 16-24 hours, then label & store.
Do not double your recipe. Any jars that don’t seal should be refrigerated.
