Simple steps to make your own home-made strawberry jam:

Preparation:

  • Sort, stem, and wash berries. Crush thoroughly. (you can feed the stems to your chickens)
  • Add 1/4 cup water.
  • Place measured fruit in 6 or 8 quart saucepan.
  • Stir in pectin & let sit for about 10 minutes. Then bring to boil over high heat, stirring constantly.

Next

  • Add 2 cups sugar when mixture comes to a full boil. return to a full boil & stir constantly. Boil for 1 minute.
  • Remove from heat & skim off foam.
  • Ladle into hot jars, leaving 1/4-inch headspace.
  • wipe jar rims clean
  • Cover with hot lids & rings.
  • Tighten rings firmly BUT do not overtighten.

Finishing steps

  • Place in a boiling water canner for 5 minutes after water is boiling. Ensure water covers jars by 2 inches.
  • Allow to cool for 5 minutes after that.
  • Remove the jars from pot.
  • Allow jars to cool for 16-24 hours, then label & store.

Do not double your recipe. Any jars that don’t seal should be refrigerated.
